By allowing the food to rotate over the coals, from hot to cold zones, it not only keeps your food from
burning, it allows food to cook very evenly and retain more moisture; creating a very succulent; crispy on
the outside, moist on the inside, result.
Setting up one of these barbecues is a chore and itself. Can you imagine coordinating two or three catering gigs that are some 6000 miles away and you have to rely on the equipment that’s their in the suppliers that are there. Yup, it’s quite a chore. But it’s nothing like the chore our troops do for us overseas keeping us safe, keeping us free.
Growing up as an Army brat I can identify with what the spouses go through. Watching my mom take care of us when my father was away for extended period of time, the longest being just about one year. This alone would make anybody appreciate the spouses. And let me remind not all spouses are female. While there are challenges for the female spouses running a household there are also challenges for the male spouses running that same household.
I think the greatest joy I got out of this barbecue was having the kids run up to me, hug me and just want to talk. This made me cry. All the trials and tribulations that I have gone through to make these barbecues happen are gone in an instant when things like this happen. I want to thank all those involved, all the organizations and individuals that donated money, all the DOD civilians and the American Legion. Thank you.
